Directions

  1. Cut the green of the carrots to 1 centimeter. Peel the carrots with a peeler and place them side by side on a baking tray.
  2. Preheat the oven to 220 c. Pour two tablespoons of olive oil over the carrots and sprinkle with salt and pepper.
  3. In the meantime, heat the rest of the oil in a saucepan with the ginger and orange peel and let it draw to a low setting.
  4. Beat the orange juice from the heat source. Roast the carrots high in the oven in approx. 10 minutes until al dente.
  5. Spoon the carrots on an elongated dish and pour the oil over it.
