Roasted cauliflower with parmesan

Preheat the oven to 200ºC.

Mix the olive oil with the leaves of 4 sprigs of thyme and garlic, pour over the cauliflower and mix well. Spread the cauliflower florets over the baking sheet, sprinkle with salt and pepper and roast for about 20 minutes in the oven.

Remove the cauliflower from the oven and sprinkle with some lemon zest and Parmesan cheese. Roast for another 20 minutes until the cheese is golden brown.

Sprinkle the roasted cauliflower with the parsley and garnish with the rest of the sprigs of thyme.
