Directions

  1. Divide the cod into 4 portions. Clean the lime. Grate the peel and press the fruit.
  2. Brush the cod with 1 tablespoon of lime juice and leave to soak for 10 minutes.
  3. Peel the nectarines and divide them into pieces. Puree the nectarine with the rest of the lime juice and stir in the lime zest, spring onions and red pepper.
  4. Cook for the salad the snow peas for 2 minutes, drain and rinse cold water.
  5. Mix the radish with the snow peas and the mint. Heat the soy sauce with the honey, vinegar and sesame oil. Pour this over the snow peas and radishes and set aside the salad.
  6. Heat a grill pan. Brush the fish with olive oil and sprinkle with salt and pepper.
  7. Roast the fish in 3-4 minutes per side until golden brown and done. Invert the fish only once.
  8. Serve the fish with the salad and the nectarine sauce, sprinkled with coriander.
