Directions

  1. Cut the pork tenderloin into slices of about 3 cm thick. Rub with the olive oil and lime juice and sprinkle with salt and pepper.
  2. Cook the carrots and sprouts for 7-8 minutes.
  3. Mix the lime zest with the crème fraîche, whipped cream, ginger, red pepper and spring onions and put in the refrigerator.
  4. Heat a grill pan and roast the pork tenderloin for 5-6 minutes. Drain the vegetables.
  5. Serve the pork tenderloin with the vegetables and ginger-lime cream. Tasty with white or wild rice.
