Roasted salmon with new potatoes and herb salsa
A delicious Dutch recipe for roasted salmon with new potatoes and herb salad.

Directions

Puree the ingredients for the salsa and add salt and pepper.

Drizzle the salmon on both sides with olive oil. Sprinkle with salt and pepper.

Cook the potatoes until done.

Heat a grill pan. Place the salmon diagonally on the ribs in the pan. Sear one side in 1.5 to 2 minutes.

Turn the fillets half a turn and roast on the same side for 1 minute to create a nice diamond pattern. Turn them over and grill for another 2 minutes.

Shake the potatoes through the herb salsa and serve them with the salmon.
