Brush the dried salmon fillet with olive oil, mixed with pesto, salt, pepper and lemon juice.

Heat the butter in a saucepan and fry the shallots in it.

Add the frozen peas and wine and cook gently for 5 minutes.

Put creme fraiche, salt, pepper and basil through, heat without cooking and puree the sauce.

Keep it warm for a while.

Heat a grill pan and toast the salmon for 2 minutes per side.

Serve the salmon with the pea sauce.
