Directions

  1. Brush the dried salmon fillet with olive oil, mixed with pesto, salt, pepper and lemon juice.
  2. Heat the butter in a saucepan and fry the shallots in it.
  3. Add the frozen peas and wine and cook gently for 5 minutes.
  4. Put creme fraiche, salt, pepper and basil through, heat without cooking and puree the sauce.
  5. Keep it warm for a while.
  6. Heat a grill pan and toast the salmon for 2 minutes per side.
  7. Serve the salmon with the pea sauce.
