Roasted tomato, pesto and mozzarella

Directions

Mix the olive oil with the herbs and brush the thick slices of tomato with it. Roast them under the oven grill and allow to cool to lukewarm.

Spread firm white bread with the pesto and top half with slices of tomato, slices of mozzarella and some fresh basil leaves.

Cover with the other sandwiches and cut diagonally (can also be grilled as a sandwich).
