Roasted zucchini with red onion

Directions

  1. Cut the zucchini into thin, slanted slices. Brush them with 4 tablespoons of olive oil and grill golden brown in a hot grill or frying pan.
  2. Sprinkle with salt and pepper and place the slices of courgette in a bowl.
  3. Heat the rest of the olive oil and roast the onion and garlic.
  4. Roast the almonds in a dry, hot frying pan until golden brown.
  5. Spoon the onion, garlic and almonds through the zucchini.
  6. Mix the lemon juice with the honey and season with salt and pepper.
  7. Drizzle the courgette and sprinkle with the parsley.
