Roedjak with mango


A tasty recipe. The vegetarian side dish contains the following ingredients: lemon, brown caster sugar, sambal oelek, mango (not too ripe), firm hand pears (eg conference), apple (eg jonagold) and cucumber.

Directions

  1. Squeeze out the lemon. Heat 4 tbsp water in a saucepan, add the caster sugar and cook on low heat until all the sugar has dissolved. Add the sambal and simmer for another 5 minutes. Season with 2 tbsp lemon juice. Allow to cool.
  2. Peel the mango and cut the flesh into long parts of the kernel. Peel the pear, remove the cores and cut thinly in length. Cut the apple in four, remove the core (you do not have to peel it) and then cut into thin parts. Cut the cucumber into long, slanted slices. Cut the slices in half lengthwise again.
  3. Put the fruit and vegetables in a bowl. Serve with the cooled sauce.
