A tasty French recipe. The vegetarian main course contains the following ingredients: olive oil, onion (chopped), eggplant (diced), zucchini (diced), garlic (finely chopped), tomato cubes (400 g), fresh basil ((15 g), leaves torn), bread ((Pave Campagnard), uncut) and Cheddar 48 (cheese).
Heat the oil in a frying pan and fry the onion, eggplant and zucchini for 5 minutes. Add the garlic and cook for another 1 min. Add the tomatoes and the basil. Leave a few leaves of basil for garnishing. Season with salt and pepper. Let simmer for 10 minutes on low heat.
Meanwhile, cut the bread into 8 slices. Divide over 4 plates and scoop out the still warm ratatouille. Grate the cheese over it, garnish with the retained basil and serve immediately. Tasty with a falafel burger.
