Directions

  1. Grate the potatoes coarsely. Dab the potato grater dry with kitchen paper.
  2. Heat the olive oil and fry the shallots or the onion.
  3. Spoon the potato grater through and stir-fry for 10 minutes.
  4. Spoon the arugula just before serving through the rösti.
