Peel the sweet potato and cut into cubes of 1 x 1 cm. Bring a pot of water to the boil and boil the potato cubes for 8 minutes. Drain.

Meanwhile, heat the oil in a stirring stir-fry the tofu 2 min. Add the vegetables and stir-fry 3 min.

Add the curry sauce and potato and heat for another 2 minutes. Season with pepper.

Meanwhile, prepare the roti according to the instructions on the package in the microwave.

Put a roti pancake on each plate and spread the curry-vegetable sauce over it.
