  5. Knead until smooth dough. Leave covered for 10 minutes.
  6. Knead the dough again, for at least 8 minutes, until it is supple and elastic. This can also be done in the food processor with the plastic dough knife.
  7. Leave to rest for 1 hour covered at room temperature.
  8. Knead the dough for a few minutes and form a roll of 25 cm long. Form an ornate S on a baking sheet covered with parchment paper.
  9. Let loosely covered with a floured cloth rise for another 30 minutes.
  10. Beat the last egg and brush the dough with it. Bake for about 20 minutes in the middle of the oven until golden brown and done. Allow to cool on a grid.
