Salad of lentils, grated beetroot, dill, lime juice and extra virgin olive oil, topped with fresh goat cheese and walnuts.

Directions

  1. Drain the lentils and rinse under cold running water.
  2. Chop the walnuts coarsely and finely chop the dill. Halve the lime and press out.
  3. Mix the lentils with the dill, the lime juice, the grated beetroot and oil and season with salt and pepper.
  4. Crumble the cheese over it and garnish with the walnuts.
