Loosen the mackerel fillet with a fork. Slice the celery and parsley very finely.

Mix the mackerel with the celery, mayonnaise and parsley. Season with the (fresh) orange juice, (freshly ground) pepper and salt.

Serve on (toasted) strips of baguette.
