Potato salad with tarragon
A tasty recipe. The vegetarian side dish contains the following ingredients: pommes culinary ((a 1.5 kg), cleansed), extra virgin olive oil, mustard (fine), dried tarragon and lemon juice.

Cook the unpeeled potatoes in water with salt in 20 minutes until done. In the meantime, beat a vinaigrette of the oil, mustard, tarragon and lemon juice.

Drain the potatoes and rinse briefly under cold running water. Cut into pieces. Mix the vinaigrette with the warm potatoes and season with salt and pepper. Allow the flavors to migrate for at least 15 minutes. Serve the salad lukewarm or cold.
