Fresh spanish tomato sauce
A tasty Spanish recipe. The vegetarian side dish contains the following ingredients: onion, garlic, tomatoes, olive oil, chili powder, medium dry sherry, thyme and salt and freshly ground pepper.

Peel and chop onion and garlic.

Wash tomatoes and cut into pieces.

Heat oil in frying pan and fry onion and garlic very softly.

Stir in the tomatoes and chilli powder and gently bake for about 2 minutes.

Add Sherry.

Sprinkle the thyme leaves above the twigs.

Cover the tomatoes in a gentle heat for about 10 minutes.

Repeat the tomato mixture in a blender and puree in a smooth sauce at the highest setting for about 1 minute.

Return the sauce to the pan and simmer for another 5-10 minutes until the thickness is good.

Season with salt and pepper.

Nice with (roasted) meat, fish or pasta..
