Salad of lamb's lettuce, pear and ham


Salad with conference pears, smoked cob ham, flageolets, lamb's lettuce and raw vegetables radish mix with a dressing of lemon juice, lemon zest and extra virgin olive oil.

Directions

  1. Grate the yellow skin of the lemon and squeeze out the fruit. Cut the unpeeled pears into quarters and remove the cores.
  2. Drizzle the flesh with 1 tbsp lemon juice.
  3. Halve the slices of ham in the length. Wrap each piece of pear in a ½ slice of ham. Drain the flageolets and mix radish with the lamb's lettuce and raw vegetables.
  4. Beat the rest of the lemon juice with the lemon zest, the oil, pepper and salt as a dressing.
  5. Sprinkle the salad with the dressing and garnish with the pears in ham.
