Salad of purslane and radish
A tasty Dutch recipe. The side dish contains the following ingredients: lemon juice, mustard, extra virgin olive oil, whipped cream, chives (roughly cut), radish and purslane.

Beat in a large bowl a dressing of the lemon juice with the mustard, oil, whipped cream and salt and pepper to taste.

Clean the radishes and cut them into thin slices. If necessary, cut the carrots from the purslane, wash the vegetables and let the purslane dry in the salad spinner.

Spoon the purslane, radishes and chives through the dressing in the dish. Serve immediately. Delicious with chicken and turkey or with the barbecue.
