Cook the peas in little water with salt in 8 minutes until al dente. Rinse the peas with cold water.

Beat a vinaigrette in a bowl of oil and vinegar. Cut the fresh mint very finely or crush it with a mortar.

Stir in the chopped fresh mint and season with salt and pepper. Pick the remaining fresh mint from the twigs and tear the leaves roughly.

Spoon the lettuce with the peas and mint dressing. Spread the lettuce on a flat dish with the rest of the coin.

Spoon a little ricotta on the salad with a teaspoon.
