Meal salad with mung beans, green asparagus, feta, cranberries and broad beans.

Directions

  1. Cook the mung beans in water with salt in approx. 25 minutes until done. Drain and let cool.
  2. In the meantime, remove the woody underside of the asparagus and cut the asparagus into 1 cm pieces.
  3. Cook the five-grain mix according to the instructions on the package. Cook the asparagus for the last 3 minutes. Drain and let cool.
  4. In the meantime, finely chop the parsley and the fresh mint leaves. Double-tops the broad beans.
  5. Mix the mung beans, grains, asparagus, broad beans, parsley, mint, cranberries and pumpkin seed oil in a large bowl.
  6. Crumble the cheese and serve.
