Directions

  1. Preheat the oven to 200 ° C.
  2. Halve the prunes, pitted and cut each half into 4 parts. Spoon with the oil and honey.
  3. Spread over a baking sheet covered with parchment paper and roast them for approx. 15 minutes in the oven.
  4. In the meantime, heat a frying pan without oil or butter and toast the almonds and salad-pita mix for 3 minutes on medium heat until golden brown.
  5. Add the honey, scoop well and bake for another 1 min. Scoop the nuts out of the pan and spread them over different baking paper so that they do not stick together. Allow to cool.
  6. Cut the avocado half in half. Remove the kernel and slice the flesh into slices in width. Slice the parsley.
  7. For the dressing, mix the olive oil, balsamic vinegar, honey, pepper and salt in a bowl.
  8. Cut the ham into strips. Mix the lettuce with the parsley and spread over a bowl. Sprinkle with the dressing.
  9. Divide the avocado, roasted plums and ham over the lettuce. Crumble the goat cheese over it and sprinkle with the nuts.
