Divide the smoked salmon fillet over 4 plates. Grind pepper and drizzle the fish with lemon juice. Keep some of the green of the spring onion separately for the dressing.

Divide the onion rings over the salmon. Mix the ingredients for the dressing and add the onion leaves.

Sprinkle a little dressing over the salmon and add the rest separately.
