Directions

  1. Fry the shallot and the garlic in the oil.
  2. Add the stock, cream, wine, tomatoes and 3/4 of the salmon and heat without cooking.
  3. Purée the soup and serve with the rest of the salmon and the spring onion in glasses or bowls.
