Cut in the gravad laughter, not too fine, pieces. Finely chop the chives and mix with the gravad laughter.
Mix the lemon juice and oil in a small bowl.
Put a shape on a small plate and put 1/4 of the gravad laughter in it. Press something. Remove the shape and make 3 tartars.
Divide the cress along the tarttails. Sprinkle the lemon dressing along and over it.
