Finely chop the fresh parsley or dill.

Mix the cottage cheese with the dill or parsley in a small bowl and add some salt and freshly ground black pepper.

Brush the slices of bread with the cottage cheese.

Place the slice of salmon and the slices of fennel on a slice.

Place the other slice with the cottage cheese on top.

Roast the sandwich in a sandwich maker until golden brown.
