Directions

  1. Spoon the cauliflower grains into a bowl and season with salt and pepper, lemon zest and juice, ginger and 2 tablespoons of olive oil. Finally, scoop the shallot and fresh herbs through it.
  2. Heat a frying pan and lightly brush the bottom with oil. Place the pieces of salmon with the skin down in the pan and cook at medium height in about 3 minutes almost done.
  3. Fry the salmon in the last minute for a short while on the other side. Place the salmon with the skin upwards on plates and drizzle with some garlic oil.
  4. Sprinkle with the oregano or thyme.
  5. Serve the cauliflower couscous in loose 'bowls' of the lettuce leaves.
