Asparagus with aubergine and mozzarella


Sandwich with a burger of asparagus, eggplant, salad onion, mozzarella, pesto and arugula.

Directions

  1. Cut the aubergine into cubes of 1 cm and the salad onion into pieces of 4 cm.
  2. Heat the oil in a frying pan and fry the aubergine for 15 minutes on medium heat.
  3. Change regularly. Add the salad onion for the last 5 minutes.
  4. In the meantime, heat the remaining oil in a frying pan and fry the burgers for about 8 minutes. Turn halfway.
  5. Meanwhile, cut the mozzarella into cubes. Cut open the sesame bulbs.
  6. Mix the eggplant, mozzarella and pesto. Season with pepper and salt.
  7. Divide some arugula, the burgers and a scoop of aubergine mixture over the buns.
  8. Serve the rest of the aubergine and arugula.
