Asparagus with aubergine and mozzarella
Sandwich with a burger of asparagus, eggplant, salad onion, mozzarella, pesto and arugula.

Cut the aubergine into cubes of 1 cm and the salad onion into pieces of 4 cm.

Heat the oil in a frying pan and fry the aubergine for 15 minutes on medium heat.

Change regularly. Add the salad onion for the last 5 minutes.

In the meantime, heat the remaining oil in a frying pan and fry the burgers for about 8 minutes. Turn halfway.

Meanwhile, cut the mozzarella into cubes. Cut open the sesame bulbs.

Mix the eggplant, mozzarella and pesto. Season with pepper and salt.

Divide some arugula, the burgers and a scoop of aubergine mixture over the buns.

Serve the rest of the aubergine and arugula.
