A nice mexican recipe. The vegetarian side dish contains the following ingredients: traditional olive oil.

Directions

  1. Peel the potatoes and cut into 1 cm cubes. Boil the cubes in little water with salt in 10 min. Until done. Drain and let cool.
  2. Clean the orange and grate a quarter of the skin. Squeeze out the orange. Cut the pepper and the spring onions into rings.
  3. Finely chop the parsley. Mix the orange juice and grater, the pepper strips, the spring onions, the parsley and the oil through the potatoes.
  4. Bring the salsa to taste with salt. Keep the salsa covered in a refrigerator until use.
