Sandwich burger with anchovy sauce and green asparagus

Directions

Knead the minced meat well with the shallot, tarragon, ketchup and a good pinch of salt and pepper and form 4 burgers. Leave them covered in the refrigerator for about 30 minutes.

Cut the hard ends of the asparagus and blanch them for 2 minutes in water with a little salt. Drain and rinse under cold water.

Mix all ingredients for the sauce and season with pepper.

Heat the oil and fry the asparagus and brown in about 2 minutes. Keep warm under aluminum foil.

Bake the hamburgers in the same pan in about 4 minutes per side brown and to taste rosé or cooked.

Put the sandwiches on plates and cover them with a little anchovy sauce.

Put a piece of rocket and a burger on it. Spoon some anchovy sauce and spread the asparagus over it.
