Sandwich with vegetable omelette
Omelet with soup vegetable on a wholemeal sandwich with hummus.
Heat the oil in a frying pan and fry the vegetables for 5 min. On medium heat. Season with pepper.
Meanwhile, beat the eggs and pour over the vegetables. Put the lid on the pan and simmer for 5 minutes on low heat.
Remove the omelet from the pan and cut into quarters.
Divide the omelette over half of the slices of bread and cover with the rest of the bread.
