Sauerkraut soup with apple and smoked sausage

Heat the oil in a soup pan and fry the shallots and garlic without coloring.

Add the bacon cubes and paprika and fry for 2-3 minutes.

Sprinkle the flour over it and bake for another 1-2 minutes.

Add the thyme, bay leaves, sauerkraut and meat stock and simmer for about 5 minutes.

Put the smoked sausage on it and cook gently for about 15 minutes.

Remove the sausage from the pan. Stir in the apple cubes and sour cream through the soup. Do not cook anymore.

Cut the sausage into slices and scoop through the soup. Season with salt and pepper.
