Sauerkraut soup with shiitakes

Directions

  1. Chop the dill finely but keep a few tarts for garnish.
  2. Allow the sauerkraut to drain well in a colander.
  3. Press out the moisture.
  4. Finely chop the shiitakes.
  5. Heat the olive oil in a soup pan.
  6. Fry the onion and shiitakes on a gentle heat for 2-3 minutes.
  7. Put the sauerkraut through and fry briefly.
  8. Pour the pot of broth and the water.
  9. Let the sauerkraut soup simmer for 15 minutes.
  10. Stir in the finely chopped dill and season with salt and freshly ground pepper.
  11. Serve sour cream in the middle with a spoonful of spoon.
  12. Garnish with a tuft of dill.
