Sauerkraut soup with shiitakes

Chop the dill finely but keep a few tarts for garnish.

Allow the sauerkraut to drain well in a colander.

Press out the moisture.

Finely chop the shiitakes.

Heat the olive oil in a soup pan.

Fry the onion and shiitakes on a gentle heat for 2-3 minutes.

Put the sauerkraut through and fry briefly.

Pour the pot of broth and the water.
-
Let the sauerkraut soup simmer for 15 minutes.

Stir in the finely chopped dill and season with salt and freshly ground pepper.

Serve sour cream in the middle with a spoonful of spoon.

Garnish with a tuft of dill.
