Preheat the oven to 200ºC.

Fry the bacon cubes crispy in a dry, hot frying pan and keep separate.

Mix the bread with the cream, eggs, garlic, thyme, mustard and half of the cheese into a smooth mixture. Add the mushrooms and bacon cubes, season with salt and pepper and stir well.

Spoon the mixture into the baking dish and sprinkle with the rest of the cheese. Bake the bread pudding in the oven for about 30 minutes until tender and golden brown. Tasty with a green salad.
