Directions

  1. Roast the hazelnuts in a dry, hot frying pan and keep separate.
  2. Heat the butter and fruit in the shallots without letting it color. Sprinkle with the caster sugar and fry for 3-4 minutes.
  3. Drizzle the pear slices with the lemon juice. Chop the nuts coarsely and mix them with salt, pepper and the ingredients for the dressing.
  4. Divide the lettuce, shallots and pears over 4 plates. Drizzle with the dressing and garnish with the parma ham. Tasty with toasted bread.
