Heat the olive oil in a pan with a thick bottom. Fry the onion and the garlic gently.

Cut the tomatoes into pieces. Spoon the tomato pieces through the paprika. Add hot pepper sauce. Bake for a further three minutes.

Add the mustard with the brown sugar. Add the vinegar and the beer too. Bring everything to a boil.

Let the dish simmer for half an hour until the sauce begins to thicken.

Puree the sauce with a hand blender and allow to reduce the sauce until the thickness is good. Let the sauce cool down.
