Shallot-goat cheese quiche with croutons


A tasty French recipe. The vegetarian main course contains the following ingredients: Italian spice mix (20 g), olive oil, garlic (finely chopped), shallots ((a 400 g), in thin rings), dark brown caster sugar, buttered puff pastry ((pack of 10 slices, frozen), thawed) , eggs, whipped cream (250 ml), goat's cheese, chicken eggs ((box of 10), hard-boiled) and white bread.

Directions

  1. Preheat the oven to 180 ºC. Remove the needles from the sprigs of rosemary from the spice mix and cut finely. Heat 2 tbsp oil in a frying pan and fry the rosemary and half of the garlic for 1 min. Add the shallots, sugar and pepper and salt and fry the shallots over medium heat in 15 min. Golden brown. Change regularly.
  2. Meanwhile, cover the spring form with the puff pastry. Ris the leaves of the sprigs of thyme from the spice mix and cut finely. Beat the eggs with the whipped cream and season with pepper. Stir in the thyme.
  3. Divide the shallot mixture over the quiche bottom. Crumble the goat's cheese. Peel the chicken eggs, halve them and divide them (with the yolk upwards) with the goat's cheese over the shallot mixture. Pour the egg mixture over it. Fry the quiche in the middle of the oven for about 45 minutes and until tender. Cover with aluminum foil if it gets too dark.
  4. Meanwhile, make the croutons. Cut the bread into pieces. Slice the sage and oregano from the spice mix. Mix the bread with the rest of the oil, the rest of the garlic, the herbs and pepper. Spread over a baking sheet covered with parchment paper. Place the baking sheet under the quiche in the oven for the last 10 minutes. Spoon after 5 minutes. Serve the quiche with the croutons on it.
