Shallot soup with juniper berries
A tasty Dutch recipe. The starter contains the following ingredients: poultry, butter, shallots (finely chopped), garlic (finely chopped), thyme, juniper berries (crushed), bay leaves, red wine, chicken broth (from tablet), whipped cream, chives ((a 15 g) and chopped ).

Melt the butter in a pan and fry the shallots and garlic.

Add the thyme, the juniper berries and the bay leaf and leave to brown on a low heat for 15 minutes.

Raise the heat and add the wine.

Let boil for 5 minutes on a high heat.

Pour in the stock, bring to the boil and simmer for a few minutes on low heat.

Remove the juniper berries, thyme and bay leaf and puree the soup with a hand blender or in the food processor.

Divide the soup over 4 bowls, carefully pour in the whipped cream and sprinkle with chives..
