Let the skewers soak in hot water.

Wash and dry the apples and drill out the cores. Cut the apples into 8 parts or blocks. Do not cut them too small because otherwise they fall apart on the skewer.

Scoop the pieces of apple, chicken fillet and apricots and the rest of the ingredients together in a large bowl and leave to marinate for an hour.

Baste all the pieces on the skewers and roast them on and around the barbecue in about 8 minutes until tender and brown.
