Slivers of omelette
Beat the eggs with 1 tablespoon of fish sauce and half of the red pepper. Heat the oil and fry an omelette of the egg mixture.
Mix the lime juice with the peanut butter, 2 tablespoons of water, the honey, the rest of the fish sauce and red pepper to a dipping sauce.
Always lay 1 leaf of lettuce in width with first a strip of omelet and then the carrot, pepper, cucumber, bean sprouts and a sprig of coriander. Fold the sides inwards and roll up the rolls in the length.
Lay with the seam down on a plate and knot if necessary with a sprig of chives. Serve with the dipping sauce.
