Halve the cucumber in the length and remove the seeds with a spoon.

Scrape the cucumber with a cheese slicer into long ribbons and finely chop the dill. Put the cucumber ribbons together with the dill in a bowl.

Bring the vinegar to the boil with the sugar, salt and water.

Pour the mixture over the cucumber and let cool in 30 min.

Remove the tails from the herrings so that 4 times 2 fillets are formed. Prepare the gorditas according to the instructions on the packaging.

Cut the red onion into wafer-thin rings and spread with the sour cream, herring and cucumber over the gordita's.
