Preheat the oven to 200ºC.

Prepare the potato crumb and whisk in the cream and egg yolk. Add the cheese, salt, pepper and nutmeg.

In a clean bowl, whisk the egg white with a pinch of salt and spatula through the potato batter.

Fill the cavities of the potatoes with the batter and souffle the potatoes in about 20 minutes in the middle of the oven. Serve immediately.
