Directions

  1. Heat the butter in a frying pan and fry the leek over low heat for about 10 minutes, stirring occasionally until soft but not browned.
  2. Add the potatoes with the stock and the water.
  3. Season everything with salt and pepper and apply the liquid to the boil. Let it simmer for 40 minutes.
  4. Stir in the roasted garlic and thyme.
  5. Puree everything with a puree tamper (you can also purée the soup in a food processor).
