Soupe au pistou
A tasty French recipe. The vegetarian starter contains the following ingredients: fresh pumpkin, fresh green beans, white beans in pot, Grana Padano cheese and traditional olive oil.

Cut the pumpkin into slices, peel them and remove the seeds. Cut the pumpkin into cubes.

Tie the herbs together into a 'bouquet'.

Cut the green beans and the tomatoes into pieces, the leeks in thin rings and the garlic fine.

Put the herb bouquet in between and add 4 liters of water and 2 tablespoons of salt. Bring the soup to the boil while stirring.

Cook the vegetables until tender, add the white beans with water and the pasta after 15 minutes. Boil the soup for another 10 minutes. Remove the bouquet from the soup.

Grate the Grana Padano cheese. Make a pistou by mashing the basil with the garlic and the grano padano in the blender and mix in the olive oil.

Stir half the pistou through the soup, warm the soup and season with salt and pepper.

Serve the soup at the buffet with the rest of the pistou in a bowl.
