Cook in a large pan of water with lid the can of condensed milk in 3 hours until caramel. Turn the can halfway. Allow to cool slightly, open the can and scoop with a little sea salt.

Cover the bottom of a plate or etagere with a layer of cream puffs and baste the top with some caramel. Place the next layer of caramel puffs and repeat until a pointed tower is created. Divide the macarons between the puffs.

Baste the soy sauce with the rest of the caramel and sprinkle with a little coarse sea salt. Cut the sprigs of rosemary into pieces of 2 cm and put the green between the puffs.
