Directions

  1. Cook the spaghetti according to the instructions on the package, but cook the pasta for 2 minutes less than indicated.
  2. Add the oil to the cooking water. Pour the spaghetti into a colander and rinse under cold running water to prevent it from spreading. Drain.
  3. Meanwhile, remove the bones and skin from the mackerel and spread the fish meat into small pieces.
  4. Cut the tomatoes in four, remove the seeds and cut the parts into cubes. Squeeze out half of the lime and cut the rest into segments.
  5. Remove the stalks from the parsley and cut the leaves fine. Chop the shallot and finely chop the garlic. Clean the leek and cut into rings.
  6. Heat the oil in a frying pan. Add the garlic, the shallots and the leeks. Bake for 4 minutes on medium heat.
  7. Spoon the spaghetti and warm with the lid on the pan for about 1 min. Season with pepper and lime juice.
  8. Add the mackerel, parsley and tomato. Turn the heat high, scoop the pasta and spread over deep plates.
  9. Sprinkle the cheese over it and serve with a lime wedge.
