Ingredients
Directions
-
Cook the spaghetti according to the instructions on the package, but cook the pasta for 2 minutes less than indicated.
-
Add the oil to the cooking water. Pour the spaghetti into a colander and rinse under cold running water to prevent it from spreading. Drain.
-
Meanwhile, remove the bones and skin from the mackerel and spread the fish meat into small pieces.
-
Cut the tomatoes in four, remove the seeds and cut the parts into cubes. Squeeze out half of the lime and cut the rest into segments.
-
Remove the stalks from the parsley and cut the leaves fine. Chop the shallot and finely chop the garlic. Clean the leek and cut into rings.
-
Heat the oil in a frying pan. Add the garlic, the shallots and the leeks. Bake for 4 minutes on medium heat.
-
Spoon the spaghetti and warm with the lid on the pan for about 1 min. Season with pepper and lime juice.
-
Add the mackerel, parsley and tomato. Turn the heat high, scoop the pasta and spread over deep plates.
-
Sprinkle the cheese over it and serve with a lime wedge.
