Preheat the oven grill to the highest setting. Cut the leeks into ½ cm thick rings. Cut the peppers into four parts, remove the seeds and cut the parts into thin strips. Heat the olive oil in a frying pan. Fry the leeks and peppers with paprika and oregano while stirring for 3-4 minutes until al dente.

Drain the moisture from the black beans and scoop the black beans through and heat the dish thoroughly. Spread the bean mixture in the baking dish and spread the cottage cheese over it.
