Put the bulgur in a bowl. Pour over the boiling water and season with salt. Stir through and leave covered for 10 minutes.

Heat the oil in a frying pan and fry the spicy paprika and curry powder for 2 minutes.

Clean the orange, grate the orange peel of the orange and press half.

Stir in the grater and juice with the spices and the fresh mint through the bulgur. Serve lukewarm or cold.
