Peel, wash and grate the potatoes coarsely over a bowl. Dab the potato grater well with kitchen paper.

Chop the onion and finely chop the parsley. Mix the grater with the onion, parsley, flour and egg. Season with salt and pepper.

Heat the oil with butter in a large frying pan over a high heat. Put 4 portions of potato mixture in small birch in the hot fat.

Press the mountaintops flat with a spoon and bake until golden brown and crispy in about 4 minutes, turning halfway.

Remove the cookies from the pan and drain on kitchen paper. Repeat until the potato mixture is empty.
